Spicy Eggplant Pickle

Eggplant or “brinjal” pickle, despite using the same ingredients, has a lot of the regional variation due to different preparation techniques. An eggplant pickle from the South of India will taste very different to one made in the north. Our version is robust and spicy.

Inspirations from an Indian kitchen 

Make a meal with a naan or roti or make a spicy sandwich. Smash the eggplant pickle and toss it through a potato salad or mix it to make a chickpea salad with fresh coriander.
